Paleo Vegan Chocolate Blueberry Parfait
For a lot of people a porridge or hot cereal means food for the cold season. We eat our porridge all year, it doesn't matter the season, actually I love the flavor of it when cold, it's like having dessert without the guilt.
I was experimenting and this delicious and very easy parfait came to life, it's absolutely amazing, refreshing, satisfying and totally healthy, your tummy is going to be sooo happy, not only for the deliciousness but for all the fiber, healthy fats, and anti-oxidants. A very complete cup of joy.
Paleo Vegan Chocolate and Blueberry Parfait
Ingredients
3 Tbsp Enjoyful Foods Porridge
1 C. plant based milk ( I used cashew)
1 tsp coconut sugar
For the chocolate sauce
1 part melted coconut oil
1 part raw cacao
1/2 part liquid sweetener of choice
For the blueberry compote
1 C. frozen blueberries
The juice of 1/2 lemon
Directions
  1. Add to a blender, porridge mix, milk and coconut sugar. Blend till smooth.
  2. Move the mix to a small pan, bring to the stove to medium high heat, mix it with a spoon to be sure is not going to get stuck in the bottom of the pan. When thickens, remove off the heat, let it cool down. 
  3. For the chocolate sauce, add all the ingredients in a glass jar, cover it and shake it till all ingredients are mixed.
  4. For the blueberry compote, bring frozen blueberries and lemon juice to a boil in a small saucepan, let it cooking in low for a bit till desired consistency. Let it cool down.
Ensemble
This is the easy part, grab your favorite glass, add a layer of porridge, a layer of blueberry compote, layer of porridge, layer of chocolate, layer of porridge. Topped with blueberry compote and chocolate sauce. Eat it, enjoy it, and maybe share it.
